Fish and Chips:
1.25 cup (155g)plain flour
1.5 cup (375ml) beer
4 floury potatoes
oil for deep-frying
4 firm white fish fillets( eg. bream,cod,coley, flake,pollack)
cornflour for coating
lemon wedges for serving

1.sift the flour into a large bowl and make a well. Gradually add the beer, whisking to make a smooth lump-free batter. Cover and set aside.
2.Peel the potatoes and cut into chips 1cm thick. Soak for 10 minutes in cold wather. Drain and pat dry. Fill a deep heavy-based pan one third full of oil and heat to 160²C, or until a cube of bread browns in 30 seconds.
Cook batches of chips for 4-5minutes, or until pale golden. Remove with tongs or a slotted spoon. Drain on crumpled paper towels.
3.Just before serving, reheat the oil to moderate 180²C, or until a cube of bread browns in 15 seconds. Cook the chips again, in batches, until crisp and golden. Drain on crumpled paper towels. Keep hot in the oven, Serve with the fish.
4.Pat the fish dry with paper towels. Dust with cornflour, dip into the batter and drain off excess. Deep-fry in batches for 5-7 minutes or until cooked. Turn with tongs if necessary. Drain on crumpled paper towels. Serve with lemon wedges.

配的酱一般是鞑靼酱 tartare sauce
Mix 1 tablespoon finely chopped onion, 1 teaspoon lemon juice, 1 tablespoon chopped gherkins, 1 teaspoon drained, chopped capers (在国内估计很难找到), 1/4 teaspoon Dijon mustard, 1 tablespoon finely chopped fresh parsley, and 1.5 cups(375g) mayonnaise. Season, to taste. Cover and refrigerate for up to 1 month. Makes about 2 cups.
